Ingredients: 1 egg white, 500g grass carp(主料:蛋清1个、草鱼片500克)
Seasoning: 5 grams of starch, 8 ml of oil, appropriate amount of ginger, appropriate amount of onion
500 grams of sauerkraut, 3 grams of chicken powder, 5 grams of soy sauce, 1 gram of pepper
(调料:淀粉5克、油8毫升、姜丝适量、葱适量、酸菜500克、鸡粉3克、老抽5克、胡椒粉1克)
Practice steps:(做法步骤:)
1、Prepare an egg white, fill the fish fillet with starch and egg white, and marinate it evenly.(准备一个蛋清,鱼片放入淀粉、蛋清搅拌均匀进行腌制)

2、Pan the oil, add ginger, garlic, sauerkraut 500g, stir fry(起锅烧油,放入姜丝、蒜、酸菜500g,大火翻炒)

3、Boil the water, add the fried sauerkraut, chicken powder 3g, soy sauce 5g, pepper 1g, in the marinated fillets
(清水煮沸,放入炒好的酸菜、鸡粉3g、老抽5g、胡椒粉1g,在放入腌好的鱼片)

4、Medium and small fire for 6 minutes(中小火煮6分钟)

5、Put the right amount of pepper, pepper, onion, hot oil(在放入适量的辣椒,花椒、葱段,热油适量)

6、Go out to eat.(出锅即可食用。)

The main difference between Chinese and America eating habits is that unlike, where everyone has their own plate of food, in China the dishes are placed on the table and everybody shares. If you are being treated by a Chinese host, be prepared for a ton of food. Chinese are very proud of their culture of food and will do their best to give you a taste of many different types of cuisine. Among friends, they will just order enough for the people there. If they are taking somebody out for dinner and the relationship is polite to semi-polite, then they will usually order one more dish than the number of guests (e.g. four people, five dishes). If it is a business dinner or a very formal occasion, there is likely to be a huge amount of food that will be impossible to finish.

A typical meal starts with some cold dishes, like boiled peanuts and smashed cucumber with garlic. These are followed by the main courses, hot meat and vegetable dishes. Finally soup is brought out, which is followed by the starchy "staple" food, which is usually rice or noodles or sometimes dumplings. Many Chinese eat rice (or noodles or whatever) last, but if you like to have your rice together with other dishes, you should say so early on.

中餐在美国的发展史
In the 19th century, Chinese restaurateurs developed American Chinese cuisine when they modified their food for Caucasian American tastes[citation needed]. First catering to railroad workers, restaurants were established in towns where Chinese food was completely unknown. These restaurant workers adapted to using local ingredients and catered to their customers' tastes. Dishes on the menu were often given numbers, and often a roll and butter was offered on the side.

In the process, chefs would invent numerous dishes such as chop suey and General Tso's Chicken. As a result, they developed a style of Chinese food not found in China. Restaurants (along with Chinese laundries which have since nearly vanished) provided an ethnic niche for small businesses at a time when Chinese were excluded from most jobs in the wage economy by racial discrimination or lack of language fluency.

For most of those who run such restaurants, wages tend to be low, and hours long[citation needed] as much of the labor is provided by immigrants or family members, but part of the attraction of Chinese restaurants is the quality and low cost of the food. In modern times, some Asian professionals invest their savings into running restaurants.

湖南都沫茄子的做法
Ground meat in eggplant with spicy Hunan sauce
Yield: 2 Servings
7 ounce Long eggplant; approximate
4 ounce Ground pork; optional
1 tablespoon Soy sauce
1 tablespoon Cold water
1 teaspoon Sugar; or less
½ teaspoon Sesame oil; or to taste
Pepper; freshly ground
1 teaspoon Cornstarch; (1 to 1-1/2)
½ cup Cold water
1 Egg; or equivalent
¾ can Flour; sifted
Oil; for frying
4 tablespoon Spicy Hunan sauce; or
Spicy ketchup; see recipe

STUFFING BATTER [INTRO -- Ground beef, chicken, or pork may be used in this recipe. We like to use assorted mushrooms, minced with a little cilantro.]
1. Make diagonal cut on eggplant; do not cut through. Make a second diagonal cut through eggplant to make a pocket. Make 16 pocketed pieces.
2. Mix the meat with the stuffing ingredients (soy thru cornstarch). Divide this into 16 portions.
3. Open and fill each eggplant pocket.
4. Mix 1/2 cup of cold water with the egg (or egg substitute). Add 3/4 cup sifted flour (more or less) to make a batter.
5. Heat oil for deep frying. Coat the eggplant pieces with batter; fry over medium heat until golden brown and meat is cooked (about 4 minutes.)
6. Remove to drain on toweling. Serve with sauce as appetizer or side dish.

Cook‘s TIP: Cut the long eggplant on the bias into 16 even pieces. Then cut each piece so that there is a slit; when pinched can be opened into a pocket. That‘s where you place stuffing.
