Entree salads may contain chicken, either grilled or fried chicken fingers on top of the salad, or seafood in the form of grilled or fried shrimp, or a fish steak, such as tuna, mahi-mahi, or salmon. Steak such as sirloin can be grilled and sliced and placed upon the salad. Caesar salad, Chef salad, Cobb salad, Greek salad and Michigan salad are types of green salad.

Quantities Ingredients
2 tablespoons flour
1 tablespoons brown sugar
1 tablespoon regular mustard
1/4 teaspoon pepper
1 cup water
1/2 cup nonfat dry milk powder
1 egg
1/4 cup vinegar
1 cup plain low-fat yogurt
1 tablespoon frozen orange juice concentrate

container or jar with cover

Instructions

1.Combine flour, brown sugar, mustard and pepper in saucepan.

2.Mix water, dry milk and egg in small mixing bowl. Gradually add mixture to flour mixture.

3.Heat to boiling, stirring constantly. Continue to stir for one minute after the mixture boils.

4.Remove pan from heat and stir in vinegar. Chill.

5.Stir in yogurt and orange juice concentrate after dressing is cold.

6.Refrigerate in covered container. Dressing will keep up to 2 weeks in refrigerator.

NOTES: Variation: One tsp. dry mustard can be substituted for the "regular" mustard.
